At ZIA Southwest Cuisine, we serve traditional foods from the state of New Mexico, mostly from the northern part of the state. This cuisine is based on a combination of Spanish colonial and Pueblo Indian cuisines. The staples of southwest cuisine are corn, beans, squash, and red and green chile.
Although there are many similarities between New Mexican and Mexican cuisine, there are also differences, the main difference being the type of chile that is used, our homemade flour tortillas, and sopaipillas.

* As much as possible, we use natural ingredients in preparing our dishes.
* We use canola and olive oil, so all of our food is 0 trans fat.
* For a vegan alternative, omit the cheese in any of our meat free dishes.
* We have mild and hot Hatch chile, but not extra hot
* We use less salt in our food, so please feel free to salt your food to suit your taste buds.
